comment Por qué la gente ríe cuando me presento como, “Fénix, como el ave”?
Nop. "Como" está suficientemente claro en este contexto para un hispanoparlante

An uncommon name, and a funny association. Imagine someone approaching you and saying "Tarzán, como el de los monos"

Just answering the "slang" part of your question. Mechar means to stuff meat with something by using a pointy device. Now use your imagination.

Think of this sentence (the structure is the same): "Las flores pintaban de sangre la copa del árbol"

comment How is the placement of this prepositional phrase grammatical?
Your sentence is wrong and meaningless. The correct one is "Un viejo "carrete" de paja nimbaba de oro la cabeza de Pito Pérez". "Nimbaba" is the past of "nimbar", something like "to paint a halo". Not a very common word BTW

comment Participating in a Spanish proficiency test?
Assuming you're going to look for a job in Belgium or any other non Spanish speaking country, you should research locally what kind of certs are better accepted there. In a Spanish speaking country, they aren't going to look at your certificates. A 5 mins conversation will do.

No es solo una cuestión de "países". En este tipo de expresiones hay variaciones entre localidades, niveles educativos y grupos de pertenencia "social"
